Pecan Log Rolls

Each 5 ounce pecan log roll is built around three layers that come together to create something far better than what you find on a candy aisle. The center is a soft, fluffy nougat made from a traditional Southern recipe. Wrapped around the nougat is a thick blanket of homemade buttery caramel cooked in small batches in our orchard kitchen. The entire log gets hand rolled in fresh, crunchy Texas pecan pieces from our own San Saba orchard, which is where the magic really happens. A typical candy bar leans on cheap fillers and sugar, while our log roll leads with real pecan flavor and texture in every slice.

Either way works, and most of our customers do both depending on the moment. The log shape is designed to be sliced into rounds about half an inch thick, which gives you neat little discs that show off the nougat-caramel-pecan layers and make sharing easy on a holiday tray. If you are just unwrapping one for yourself at the desk or in the car, biting straight in is perfectly acceptable and probably how most folks have enjoyed log rolls since they showed up at the country store. We will not tell.

It comes down to how many folks will be eating from it and how often. A single 5 ounce log roll yields roughly eight to ten generous slices, which is right for a small gift, a personal treat, or one family snacking afternoon. The two log roll size is the better value if you want one to keep at home and one to gift, if you are putting together a holiday dessert tray, or if you have a household that is going to ask for seconds. A lot of customers also pair two log rolls with our other small treats to build a custom gift basket.

All three lean on pecans, caramel, and that Southern small batch tradition, but the textures and presentation are very different. A chewy praline is a single bite of caramel and pecans cooked together, while a Caramillican is a turtle-style piece with pecans and caramel dipped with a creamy milk chocolate top to finish. A log roll is the only one of the three that includes a soft nougat center, which gives you a lighter, fluffier bite alongside the caramel and pecan. If you want chocolate, reach for the Caramillican. If you want a single chewy candy, the praline is your pick. If you want all the textures in one slice, the log roll delivers.

The log roll is wrapped tightly in food-safe wrapping that keeps the caramel sealed and the pecans where they belong during shipping. We have been shipping log rolls all over the country for years and have the packaging dialed in. Keep in mind that the caramel can soften when exposed to temperatures above 80°F, so during the warm months we add insulation at our discretion and recommend faster shipping options for hot-weather destinations. Once the log roll arrives, store it in a cool, dry pantry to keep the nougat fluffy and the caramel at the right chew, or refrigerate it briefly for an extra firm slice.
