Once a week our family joins about four or five other families for a small group Bible study. While the kids get some fun playtime with each other, the adults dive into God’s Word and discuss how to better live our lives in an honorable way. Occasionally, we take a break from our normal routine and just spend our time socializing. On one such occasion, recently, we gathered at our home and had a potluck meal around a nice, toasty fire. I had a recipe for a green salad, which happened to include pecans, that a friend of mine had shared with me and I was dying to try it. Below is the recipe. I hope you enjoy! Salad with Pecans and Bacon

4 cups Lettuce

1 Red Apple, diced (I prefer Gala)

5 slices Bacon, cooked and crumbled

3/4 cup Pecan Pieces, toasted

Balsamic Dressing (recipe below)

 

I make the dressing first.

The dressing recipe:

3 Tbl. Olive oil

2 tsp. Dijon mustard

1 clove Garlic

1 Tbl. Balsamic vinegar

I just have a little recommendation. You can thank me later. My favorite olive oil and balsamic vinegar come from a company here in San Saba, Texas. It’s a local favorite and I can’t recommend it enough. San Saba Olive Oil Company has a wonderful selection of oils and vinaigrettes that you will love! You can purchase online or at their retail store in downtown San Saba.

Add all the ingredients into a small bowl and whisk together.

In a large bowl add the lettuce, pecans, and dressing. Then toss.

As you can see. Happy faces! Partly because our bellies were full, but mainly because we were spending time together. I think some of the guys were trying to mask their smiles, but we all know that they were enjoying it just as much as the rest of us! 😉 You know, potluck is a term normally reserved for a haphazard means of throwing things together. You never know what you’re going to get. But sometimes potluck is not so potluck! We had an amazing spread of delicious food. Fried back strap with gravy, sweet potatoes, salad, corn on the cob, beans. I should stop because I’m getting hungry now. At any rate, total deliciousness and like I said….happy faces! (Well, most of us)
