Most kids love sugar cookies. To be really honest, most adults do too. I love to top mine with colorful icing to appeal to my creative side. But I have a recipe for you that tastes so good it doesn’t require icing. These unique sugar cookies are unique in nature because they have something special added to them. We added pecan meal to our traditional sugar cookie recipe and let me tell you - they are great!

I was fortunate enough to have my daughter, Anna, join me on this cooking adventure. I know I'm her mom and you might think I'm partial, but I just have to say this little girl is awfully cute! She loves life and she's been like that ever since she was a baby. Anna was my firstborn and I was pretty spoiled to be ushered into motherhood with a daughter like her. She was so happy as a baby and not much has changed, in that regard, with her personality. I've noticed that she still approaches new experiences with excitement and she has a way of making those around her join in on her excitement. You don't have to take my word for it. Traditional Sugar Cookies

When I was growing up my mom and her friends would get together each year and bake sugar cookies with all of us kids. It was an all-day experience, and I'm sure it took our moms multiple days to prep for the whole occasion. There were so many kids that we had to take turns at the table decorating the cookies. Usually, they divided us up according to age, which made the day even better. We had every color of icing that you could imagine and sprinkles galore. It was a tradition that I will always remember. We made memories that each of us still treasures today.

Now that I'm older and have kids of my own, I want to pass these special traditions on to my kids. So most years we bake sugar cookies and decorate them with icing and sprinkles. But there are some times when I'm torn between wanting to make memories with my kids and realizing that I don't have the energy for the mess. You know, that thought of overloading my kitchen with flour, sugar and food coloring can be too much for me to handle. Yes, I want to spend some quality time with my precious children, but I'm just not in the mood for all the cleanup that will have to ensue directly after the baking process.

Its moments like these when I'm really glad that I have this recipe! It is still super delicious and the kids love it, but it has the added bonus of omitting the mess. These Unique Sugar Cookies are just right for moments like such. So without further adieu - here is my recipe for Unique Sugar Cookies with Pecans. I hope your kids enjoy them as much as mine do.

Unique Sugar Cookies with Pecans

Ingredients:
1/2 cup butter
1 egg
1 cup sugar
2 Tbl. vanilla
2 cups flour
1/4 tsp salt
1/2 tsp baking soda
1/2 cup Pecan Meal

Instructions:
In a large bowl mix together butter, egg, sugar, vanilla and 1 cup of flour. Add salt, baking soda, remaining cup of flour and pecan meal and mix thoroughly. Spray a cookie sheet with non-stick spray. Use a spoon to scoop dough from bowl and place spoonfuls of dough on the cookie sheet. Bake for 10 minutes in the oven at 400 degrees.
