Ingredients
1 cup shortening 1 cup sugar 1 cup brown sugar 2 eggs 2 cups oats 2 cups flour 1 2/3 tsp baking powder 1 tsp baking soda ½ tsp salt 1 tsp vanilla
1 cup chopped pecans 1 cup coconut ½ tsp cinnamon
Instructions
Mix shortening, sugar and brown sugar until creamy. Add eggs and vanilla and mix. Add flour, salt, baking powder, baking soda and cinnamon. Stir in oatmeal, coconut and pecans. Drop by spoonful on greased cookie sheets. Bake at 375 degrees for 12 to 15 minutes or until golden brown.
