      How Many Pecans Your Recipe Needs

      The most common question we get from bakers is how much to order, and the arithmetic is easier than it looks. A pound of shelled pecans gives you roughly 4 to 4.5 cups of halves, and a cup of halves weighs about 3.5 ounces. 

      A classic 9-inch pecan pie takes around a cup and a half, so a single pound covers three pies with a handful left for the cook. A standard batch of cookies or a loaf of banana bread wants about a cup. If you are buying in the shell instead, count on a pound of in-shell pecans yielding about 2 cups of meat.

      Baking Tips for Getting the Most From Fresh Pecans

      A few small habits make a noticeable difference. Toast your pecans first, six to eight minutes at 350 degrees Fahrenheit, then cool them completely before they go into a batter, because warm nuts will melt butter and slacken a dough. Toss chopped pecans in a spoonful of the recipe's flour before folding them in and they will stay suspended instead of sinking to the bottom of the pan. 

      Chop by hand rather than in a food processor when the size matters, since a processor turns half the batch to dust before the rest is cut. And add nuts at the very end of mixing, with as few turns of the spoon as you can manage.

      For anything mixed into a batter, yes, and it is the single easiest upgrade to a recipe. Toasting drives off a little moisture and concentrates the oils, so the pecan flavor survives the sugar and butter around it instead of disappearing into the crumb. Six to eight minutes at 350 degrees Fahrenheit on a dry sheet pan is plenty, tossed once, and pull them a moment before you think they are ready because they keep cooking off the heat. The exception is a topping that will be exposed in the oven for a long bake, like a pecan pie, where the nuts toast in place and toasting beforehand can push them too far.

      Because they are heavier than the batter holding them, which is a matter of physics rather than technique. Two fixes work well. Toss the chopped nuts in a tablespoon of the recipe's dry flour before folding them in, so the coating grips the batter and slows the sinking. And chop them smaller, since small pieces distribute through a loaf far more evenly than large ones. If the batter itself is very thin, as in some quick breads, expect a little settling no matter what you do.

      As far ahead as you like, provided you freeze them. Pecans keep close to a year in the freezer with no real loss in flavor or texture, and they go straight from frozen into a recipe with no thawing needed, so plenty of our customers buy during the fall harvest and bake from that stock through the following spring. In the refrigerator, count on several months; in a warm pantry, a few weeks before the flavor starts to flatten. Buying early is usually the better plan anyway, since the freshest nuts of the year are the ones available right after harvest.

      More than most people expect, and it works in both directions. Sugar, butter and chocolate mask a lot, but they cannot add flavor a nut does not have, so a stale pecan in a cookie reads as texture and nothing else. Worse, oxidized nut oils carry a faint sharp bitterness that survives baking and leaves people saying they do not much care for pecans. If a pecan recipe has ever disappointed you, the nuts are the first thing to suspect, well before the recipe.
