This bundle includes a one pound bag of our raw Grade 1 pecan halves and a one pound bag of our chopped pecan pieces, packaged separately so you can use each one for what it does best. Pecan halves are the right pick when you want pecans to be visible in your finished dish, like the top layer of a pecan pie, a fancy salad, or candied pecans for gifting. Chopped pieces are the better fit when you want pecan flavor and texture distributed evenly through cookies, brownies, granola, muffin batter, pancake mix, or ice cream topping. Most serious bakers keep both on hand for exactly this reason.

Two main reasons folks pick the combo. First, it is a great value compared with buying each form in a separate one pound bag at retail price. Second, it solves the can't-decide problem for new customers, holiday baking lists, or households where one person bakes pies (halves) and another bakes cookies (pieces). The pecans are frozen in our large commercial freezers right after harvest and again after shelling, which locks in the natural oils and prevents the rancid, slightly off taste you sometimes get from grocery store pecans that have sat on a warm warehouse shelf for months. Treat both bags like any premium oil-rich nut and keep them cool. If you will use the bags within a few weeks, the pantry is fine. For longer storage, refrigerate the opened bags in airtight containers for several months, or freeze them for up to a year. That cold storage protects the natural pecan oils and keeps the flavor and texture fresh for whenever a recipe calls for them. The chopped pieces have a little more surface area exposed to air, so if you are stretching them across many months, freezer storage is especially helpful for that bag.

It is true that chopping any nut exposes more surface area to air, which can speed up the natural oxidation of the oils inside. That is why we take our freeze approach seriously. The pecans are kept frozen through the shelling and sorting stages and packaged fresh, so they reach your kitchen at the start of their shelf life rather than the end. As long as you keep them cool and sealed after opening, ideally in the refrigerator or freezer for longer-term storage, you will not run into the rancid issue that plagues store-bought chopped nuts that have been sitting in a warm warehouse or on a warm retail shelf for months.
