Chewy Pecan Pralines - Individual

Both candies share family roots, but the textures tell two different stories. A New Orleans praline tends to be more cookie-like, with a sandy or crystalline bite that crumbles when you press on it. Our Texas chewy praline is softer and stretches just a little when you bite into it, which is where the chewy in the name comes from. We cook ours the old way in copper kettles over a candy stove, using fresh pecans straight from our orchard. Both styles are delicious, but folks who grew up in Texas or the surrounding states often recognize that pull-and-give chew as the praline they remember.

Each praline is individually wrapped, which keeps it tasting like it just came off the candy stove. Stored in a cool, dry pantry, they will keep their chewy texture and rich caramel flavor for several weeks. If you are stocking up for the holidays or stashing some away for a road trip, you can keep the wrapped pieces in the refrigerator for a couple of months, or in the freezer for longer than that. Just let them rest at room temperature for a few minutes before unwrapping so they return to their proper softness.

The sweetness is definitely there, since that is the heart of any praline, but we use enough fresh pecans in each piece that the nut flavor stays loud and clear. Because our pecans come from our own family orchard and get used while they are still at peak freshness, they bring a deep, toasty richness that balances out the sugar. A lot of customers tell us our pralines do not taste cloying the way some grocery-store candies do, and that is because there is real nut character in every bite, not just a sweet shell with a pecan tucked inside.

Individually wrapped pralines are wonderful for building your own thoughtful assortment, slipping into a small package with a card, or filling a tin alongside other Millican treats. They travel well and look pretty when arranged on a tray for company.
