Gourmet Caramel Pecan Popcorn

Some snacks are hard to stop eating, and this is one of them. Our caramel pecan popcorn starts with corn popped fresh in our own commercial kitchen, coated in a homemade buttery caramel cooked in small batches, then loaded with praline pecans from the orchard just outside our door. The new recipe carries more pecans than it used to, which is the change our customers asked for most and the one we were happiest to make.

It comes in a 1-gallon gift pail holding 1-1/2 pounds, and it is gluten free.

What Makes Our Caramel Pecan Popcorn Different

Most gourmet popcorn leans on the caramel and treats the nuts as an afterthought. We do it the other way around. We grow the pecans, shell them, and praline them ourselves in San Saba, Texas, so the nut is the star and the caramel is there to carry it. Fresh pecans have a buttery, almost sweet character on their own, and when they are pralined and folded into warm caramel corn, that flavor comes through instead of getting buried under sugar. If you tend to gravitate toward a pecan salted caramel profile, this hits the same notes, with the salt coming naturally from the butter in the caramel rather than a heavy finishing sprinkle.

A Gift Pail of Caramel Pecans and Popcorn People Actually Finish

The gallon pail was designed with giving in mind. It travels well, it looks handsome on a desk or a kitchen counter, and it holds enough for a family, an office, or a long car ride. Our customers reach for it constantly during the holidays, but it works just as well as:

  • A client or customer thank-you that does not feel like corporate filler
  • A host gift when you are invited to dinner and want to bring something Southern and a little different
  • A teacher, neighbor, or mail carrier gift at Christmas
  • A movie night, tailgate, or road trip snack that beats anything from a gas station
  • A gift for the person who has everything, since almost nobody turns down caramel pecans and popcorn

If you would rather have a smaller format or need to ship several at once, the same recipe is available in a bag as well.

Small Batch Caramel Pecan Treats From a Family Orchard

Our family has been growing pecans in San Saba since 1888, when our great-great-grandfather E.E. Risien planted the orchard that helped earn this town the title of Pecan Capital of the World. Six generations later, we still handle everything ourselves: harvesting, shelling, roasting, candy making, packaging, and shipping. That is unusual in this business, and it is the reason we can put pecans this fresh into a confection. Pecans are the only major tree nut native to North America, and they carry roughly 20 vitamins and minerals, though we will be honest with you, this particular pail is squarely in the treat category.

FAQ'S FAQ'S
  • How much popcorn is actually in the pail, and how many people will it feed?

The one-gallon pail holds about a pound and a half of finished caramel pecan popcorn, which goes a remarkably long way thanks to how light popcorn is by volume. For a movie night with the family, the pail comfortably serves four to six people with leftovers for the next day. At a small gathering or office snack table, it will satisfy a dozen or so folks dipping in over the course of an afternoon. If you are putting together a big party spread, you can also pour it into a couple of bowls to spread the love around the room.

  • How is your caramel pecan popcorn different from a typical caramel corn?

Most caramel corn you find at the grocery store leans heavily on the sugary coating and uses cheap nuts, if it includes nuts at all. Our recipe builds the popcorn around fresh praline-flavored pecans from our own San Saba orchard, which means you actually get a generous helping of pecan nuts in every handful rather than the occasional surprise. The caramel itself is a homemade buttery recipe rather than a corn-syrup-and-color shortcut, and it coats the popcorn evenly so the candy and the corn taste like they belong together. The result is a snack that hits the sweet and salty spot without feeling cheap.

  • Is this a good gift, or just a snack for around the house?

It is both, which is one of the reasons it has stayed in our lineup so long. Around the house, the gallon pail is a fantastic movie-night centerpiece or party snack. As a gift, the pail itself is decorative and ready to give as soon as it arrives, with no extra wrapping needed. It is a popular pick for thank-you gifts to teachers, coaches, mail carriers, and clients, because the size feels generous and the flavor is universally crowd-pleasing. Plenty of folks order one for the family and a second to ship as a thoughtful surprise.

  • How long will it stay fresh after I open the pail?

Caramel popcorn stays at its best when it is kept dry and sealed away from air, which is what makes the gallon pail format so useful. The lid snaps back on tightly between snack sessions, locking in the crunch. Stored at cool room temperature with the lid sealed, the popcorn will hold its crisp, candy-coated texture for several weeks. If you live somewhere humid, you may notice the popcorn softening sooner, in which case transferring it to an airtight container or zip-top bag helps preserve the snap.

  • Won't the pecans get stale or chewy in the caramel coating?

That is a fair concern with any pecan-and-caramel candy, but our recipe and process help avoid both problems. The pecans go in fresh from our orchard, and the praline coating actually helps lock in the natural oils that keep pecans from turning soft. The caramel itself is cooked to the right temperature so it stays brittle and crisp rather than going gummy. As long as you keep the pail sealed and away from heat and humidity, the pecans should stay crunchy and toasty right alongside the popcorn for the life of the bag.
