Milk Chocolate Caramillicans - Individual

Caramillicans are our family's take on the classic chocolate turtle, but the differences come through in the details. Each one starts with a buttery caramel that we cook by hand in our country store kitchen here in San Saba. Then we pour this rich caramel over the pecans from our own orchard rather than nuts trucked in from somewhere else. The pecans which are covered in caramel then get topped with rich creamy milk chocolate to finish them. The Food Network even featured the recipe on their show “Unwrapped”, which still tickles us every time we tell that story. Caramillican are built around the pecans, with homemade caramel and rich premium chocolate playing supporting roles.

Yes, every Caramillican is individually wrapped, which makes them easy to drop in a lunchbox, share around the office, or set out in a candy dish without anything sticking together. For storage, keep them in a cool, dry spot and they will hold their flavor and texture beautifully for several weeks. If your kitchen runs warm in the summer months, you can pop the wrapped pieces into the refrigerator or even the freezer with no harm done. Just let them sit out for a few minutes before unwrapping so the chocolate softens back up and the caramel returns to its proper chewy texture.

This is the question we love getting. The whole reason we keep making these the old-fashioned way is to make sure the pecan stays front and center. Because our pecans come straight from our orchard and get used while they are still fresh, they bring a rich, almost buttery flavor that holds its own against the chocolate and caramel. Our Caramillicans are made in small batches in a kitchen that also handles dairy products, as the milk chocolate and caramel components both contain milk. If you have nut allergies, our kitchen does not process any other nuts besides pecans so there are no other nut allergens present.  The good news is they are gluten free, which makes them safe for friends and family who avoid wheat.
