Pecan Blondies

This recipe is a delightful twist on the classic brownie, blending the sweet, buttery taste of blondies with the rich, nutty flavor of our fresh pecans. Ingredients

1 ¼ cup chopped pecans, toasted (133 g)

¾ cup melted unsalted butter (12 tbsp, 169 g)

1 cup packed dark brown sugar (233 g)

1 egg + 1 egg yolk

2 tsp vanilla extract

1 ½ cup flour (225 g)

½ tsp salt

Instructions

  1. Preheat oven to 350 deg F and line a greased 8x8 pan with parchment paper.

2. In a medium bowl, using a whisk or a hand mixer mix together the melted butter and brown sugar until well combined and the mixture is lighter in color. Add egg, egg yolk, and vanilla extract and mix to combine. Add flour and salt and mix until no streaks of flour remain. Fold in the pecans. 

3. Pour mixture into prepared pan and use an offset spatula to smooth out the batter. 

4. Bake at 350 for 20 - 25 minutes until the center is set and only a few moist crumbs are on the toothpick. Allow to cool completely in the pan before slicing. Enjoy!

 

Optional mix-ins: 1 tsp of cinnamon, 1 cup of mini chocolate chips, ¼ tsp maple extract
